Roasted Acorn Squash

Ingredients

The squash

  • 2 ½ pounds acorn squash

The sauce

  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • to taste salt
  • to taste black pepper
  • as needed cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Halve the acorn squash lengthwise and remove the seeds.
  3. Cut the halves into ¾ inch thick slices.
  4. Line a sheet pan with foil and coat it with cooking spray.
  5. In a small bowl, mix together the olive oil, maple syrup, brown sugar, cinnamon, salt, and pepper.
  6. Pour the olive oil mixture over the squash and toss to coat.
  7. Bake for 20-25 minutes or until the acorn squash is tender and starting to brown.
  8. Serve immediately.
