Roasted Acorn Squash with Maple Butter

Ingredients

The squash

  • 1 piece medium acorn squash

The topping

  • 2 tablespoons butter
  • 2 tablespoons maple syrup
  • 1 pinch salt

Instructions

  1. Preheat the oven to 425ºF.
  2. Slice the acorn squash in half and remove the seeds and membranes.
  3. Sprinkle salt on the cut sides of the squash and place them cut side up on a baking sheet.
  4. Roast the squash for 15 minutes.
  5. Remove from the oven and add 1 tablespoon of butter and 1 tablespoon of maple syrup to each half.
  6. Return to the oven and roast for an additional 25-35 minutes until very soft, basting with the melted maple butter every 10 minutes.
  7. Once roasted, let cool slightly before serving.
