Ingredients

The squash

  • 2 pieces acorn squash

The glaze

  • cup salted butter
  • cup maple syrup
  • ½ teaspoon kosher salt

Instructions

  1. 1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. 2. Halve the acorn squash, scoop out the seeds and pith, peel, and slice into half-rings.
  3. 3. Melt the butter, maple syrup, and salt in a microwave, then whisk to emulsify.
  4. 4. Toss the squash in the butter and syrup mixture on the prepared baking sheet until coated.
  5. 5. Roast in the preheated oven for 20-25 minutes, moving the squash around every 5 minutes until caramelized and crispy on the edges.
  6. 6. Serve and enjoy!
