Ingredients

The squash

  • 1.5 lb acorn squash

The glaze

  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup
  • ½ tsp smoked paprika
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 400ºF.
  2. Wash and dry the acorn squash, then cut it in half lengthwise and remove the seeds.
  3. Slice the squash into ½-inch thick slices.
  4. In a bowl, mix together olive oil, maple syrup, smoked paprika, and salt.
  5. Coat the squash slices with the glaze in a bowl.
  6. Arrange the coated squash on a parchment-lined baking sheet.
  7. Roast the squash for 40 minutes or until tender.
  8. Season with a pinch of salt and serve.
