Instructions
- Preheat the oven to 400ºF.
- Wash and dry the acorn squash, then cut it in half lengthwise and remove the seeds.
- Slice the squash into ½-inch thick slices.
- In a bowl, mix together olive oil, maple syrup, smoked paprika, and salt.
- Coat the squash slices with the glaze in a bowl.
- Arrange the coated squash on a parchment-lined baking sheet.
- Roast the squash for 40 minutes or until tender.
- Season with a pinch of salt and serve.
