Roasted Christmas Beef Tenderloin with Creamy Horseradish Sauce

Ingredients

Horseradish Sauce

  • ½ cup lowfat plain Greek yogurt
  • 2 teaspoons freshly grated horseradish
  • ½ teaspoon fresh lemon juice
  • a couple squirts Worcestershire sauce
  • a small pinch salt
  • freshly ground black pepper

Beef Tenderloin

  • 1 (6-pound) trimmed beef tenderloin, trussed
  • 1 teaspoon salt
  • coarsely ground black pepper
  • 1 tablespoon canola or avocado oil
  • 5 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • ½ teaspoon garlic powder
  • flaked finishing salt for serving

Instructions

  1. Combine all sauce ingredients and chill until ready to serve.
  2. Remove the beef from the refrigerator 30 minutes prior to cooking.
  3. Preheat the oven to 375°F and prepare a roasting pan.
  4. Season the beef with salt and pepper on all sides.
  5. Heat oil in a large pan and brown the beef on all sides, adding thyme and rosemary.
  6. Transfer the beef to the roasting pan and sprinkle with garlic powder.
  7. Cook in the oven until the internal temperature reaches 120°F, about 25-30 minutes.
  8. Let the beef rest for 10 minutes before slicing.
  9. Serve with horseradish sauce and finishing salt, if desired.
