Instructions
- Season the chuck roast with salt and pepper.
- Heat vegetable oil in a large pot and brown the meat on all sides.
- Add diced onion and enough broth to mostly submerge the meat.
- Stir in lime juice, vinegar, chipotle peppers, cumin, oregano, cloves, salt, and bay leaves, then simmer covered for 2½ to 3 hours until tender.
- Alternatively, cook in a slow cooker for 3 to 4 hours on high or 7 to 8 hours on low.
- Once cooked, shred the beef and season to taste.
- For the rice, cook according to package instructions using chicken broth instead of water and stir in cilantro.
- For the filling, mash half of the drained beans and sauté diced onion in oil until softened.
- Add tomato paste, garlic, and spices, cooking until fragrant.
- Stir in the remaining beans and broth, cooking until most liquid evaporates.
- Mix in the shredded beef and lime juice, adjusting salt to taste.
- Warm tortillas, fill with rice, beef filling, and cheese, then fold into burritos.
- Add any desired toppings and serve.
