Ingredients

Shredded Beef

  • 1 boneless chuck roast (2-3 pounds)
  • to taste Salt and pepper
  • 3 tablespoons vegetable oil
  • 1 medium white or yellow onion (diced)
  • 1-6 cups beef or chicken broth
  • ¼ cup lime juice
  • ¼ cup apple cider vinegar
  • 2 pieces chipotle peppers in adobo sauce (minced, optional)
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ¼ teaspoon ground cloves (optional)
  • ¾ teaspoon salt
  • 3 pieces bay leaves

Cilantro Rice

  • 1 cup uncooked rice
  • 1½ to 2 cups chicken broth
  • ½ teaspoon salt
  • ¼ cup minced fresh cilantro

Burrito Filling

  • 1 15-ounce can pinto or black beans (drained and rinsed)
  • 1 tablespoon vegetable oil
  • 1 large onion (diced)
  • 3 tablespoons tomato paste
  • 3 cloves garlic (minced or pressed)
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chipotle chili powder or regular chili powder
  • cup chicken broth
  • 1 tablespoon lime juice
  • ¾ teaspoon salt
  • 8 10-inch flour tortillas
  • 2 cups shredded cheese (optional)

Optional Toppings

  • to taste Salsa

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat vegetable oil in a large pot and brown the meat on all sides.
  3. Add diced onion and enough broth to mostly submerge the meat.
  4. Stir in lime juice, vinegar, chipotle peppers, cumin, oregano, cloves, salt, and bay leaves, then simmer covered for 2½ to 3 hours until tender.
  5. Alternatively, cook in a slow cooker for 3 to 4 hours on high or 7 to 8 hours on low.
  6. Once cooked, shred the beef and season to taste.
  7. For the rice, cook according to package instructions using chicken broth instead of water and stir in cilantro.
  8. For the filling, mash half of the drained beans and sauté diced onion in oil until softened.
  9. Add tomato paste, garlic, and spices, cooking until fragrant.
  10. Stir in the remaining beans and broth, cooking until most liquid evaporates.
  11. Mix in the shredded beef and lime juice, adjusting salt to taste.
  12. Warm tortillas, fill with rice, beef filling, and cheese, then fold into burritos.
  13. Add any desired toppings and serve.
