Ingredients

The Soaker

  • 2 tablespoons wheat bran
  • ¼ cup water

The Dough

  • ¾ cup warm water (about 110 degrees F)
  • 1 tablespoon dry active yeast
  • 3 cups whole wheat flour plus a few additional tablespoons as needed
  • 3 tablespoons vital wheat gluten
  • 3 tablespoons brown sugar
  • 1 ½ teaspoons kosher salt
  • 3 tablespoons cooked brown rice
  • 1 ½ tablespoons honey
  • ½ cup buttermilk
  • 1 tablespoon poppy seeds or rolled oats for sprinkling

Instructions

  1. Prepare the soaker by combining cornmeal, rolled oats, and wheat bran with ¼ cup water in a bowl and let it sit overnight.
  2. Combine warm water and yeast in a small bowl and let it stand until foamy.
  3. In a stand mixer, mix whole wheat flour, vital wheat gluten, brown sugar, and salt.
  4. In another bowl, mix the soaker, brown rice, honey, and buttermilk, then add to the dry ingredients along with the yeast mixture.
  5. Mix until a shaggy dough forms, then knead for 6 minutes using a mixer or by hand until smooth.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size (90 minutes to 2.5 hours).
  7. Shape the dough into a rectangle and roll it into a log, placing it seam-side down in a greased loaf pan.
  8. Mist the top with water, sprinkle with poppy seeds or oats, and let it rise until about 1 inch above the pan rim (about 1 hour).
  9. Preheat the oven to 350°F and bake for 40-45 minutes until deep brown and hollow-sounding when tapped.
  10. Cool the loaf for 1-2 hours before slicing.
