Ingredients

Caramel topping

  • ¾ cup granulated sugar
  • ¼ cup warm water
  • 1 Tbsp warm water

Flan custard mixture

  • 1 pkg. cream cheese, well softened
  • 2 Tbsp granulated sugar
  • 4 large eggs
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 2 tsp vanilla extract

Instructions

  1. 1. Boil water and preheat the oven to 350°F.
  2. 2. In a saucepan, whisk together sugar and water for the caramel topping and cook until it boils.
  3. 3. Once boiling, stop stirring and let it cook until amber, then add the remaining warm water and whisk.
  4. 4. Pour the caramel into a cake pan, tilting to coat the bottom, and set aside.
  5. 5. In a mixing bowl, blend cream cheese and sugar until smooth.
  6. 6. Add eggs one at a time, mixing well after each, then blend in the sweetened condensed milk, evaporated milk, and vanilla.
  7. 7. Pour the custard mixture over the caramel in the pan.
  8. 8. Place the pan in a roasting pan and add boiling water halfway up the sides.
  9. 9. Bake until nearly set, about 50-70 minutes.
  10. 10. Cool for 1 hour, then chill in the refrigerator for at least 4 hours.
  11. 11. Invert onto a serving plate and slice to serve.
