Instructions
- 1. Boil water and preheat the oven to 350°F.
- 2. In a saucepan, whisk together sugar and water for the caramel topping and cook until it boils.
- 3. Once boiling, stop stirring and let it cook until amber, then add the remaining warm water and whisk.
- 4. Pour the caramel into a cake pan, tilting to coat the bottom, and set aside.
- 5. In a mixing bowl, blend cream cheese and sugar until smooth.
- 6. Add eggs one at a time, mixing well after each, then blend in the sweetened condensed milk, evaporated milk, and vanilla.
- 7. Pour the custard mixture over the caramel in the pan.
- 8. Place the pan in a roasting pan and add boiling water halfway up the sides.
- 9. Bake until nearly set, about 50-70 minutes.
- 10. Cool for 1 hour, then chill in the refrigerator for at least 4 hours.
- 11. Invert onto a serving plate and slice to serve.
