The caramel
Instructions
- Prepare the caramel by combining sugar and water in a saucepan over medium heat until it turns deep amber.
- Divide the caramel evenly among 6 ramekins, tilting them to coat the bottoms.
- Preheat the oven to 350°F (176°C).
- In a clean saucepan, heat milk and ½ cup sugar over low heat until sugar dissolves.
- Whisk the eggs in a large bowl, then gradually add the warm milk mixture and stir in vanilla extract.
- Strain the custard mixture into the prepared ramekins.
- Place the ramekins in a baking pan and add hot water to the pan until it reaches halfway up the sides of the ramekins.
- Cover the baking pan with aluminum foil and bake for about 50 minutes until set.
- Remove from the oven, let cool, then refrigerate for a few hours before serving.
- To serve, run a knife around the edges of the ramekins, invert onto plates, and drizzle with extra caramel if desired.
