Ingredients

The custard

  • 4 eggs eggs
  • ½ cup sugar
  • 2 cups whole milk
  • 1 teaspoon vanilla extract

The caramel

  • 1 cup sugar
  • ½ cup water

Instructions

  1. Prepare the caramel by combining sugar and water in a saucepan over medium heat until it turns deep amber.
  2. Divide the caramel evenly among 6 ramekins, tilting them to coat the bottoms.
  3. Preheat the oven to 350°F (176°C).
  4. In a clean saucepan, heat milk and ½ cup sugar over low heat until sugar dissolves.
  5. Whisk the eggs in a large bowl, then gradually add the warm milk mixture and stir in vanilla extract.
  6. Strain the custard mixture into the prepared ramekins.
  7. Place the ramekins in a baking pan and add hot water to the pan until it reaches halfway up the sides of the ramekins.
  8. Cover the baking pan with aluminum foil and bake for about 50 minutes until set.
  9. Remove from the oven, let cool, then refrigerate for a few hours before serving.
  10. To serve, run a knife around the edges of the ramekins, invert onto plates, and drizzle with extra caramel if desired.
