Ingredients

Caramel Sauce

  • ½ cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ cup Water

Custard

  • 6 large Egg yolks
  • 2 cups Heavy cream
  • ½ cup Besti Powdered Monk Fruit Allulose Blend
  • 1 pinch Sea salt
  • 2 tsp Vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. In a small saucepan over low heat, combine ½ cup of Besti and ¼ cup of water. Heat until dissolved.
  3. Increase heat to bring to a boil, then simmer without stirring for about 20-25 minutes until a golden syrup forms.
  4. Quickly divide the syrup among 6 ramekins, tilting to spread the caramel.
  5. In a medium bowl, whisk together the egg yolks.
  6. In a medium saucepan over medium heat, heat the heavy cream, remaining ½ cup of Besti, and a pinch of salt until bubbles form on the edges. Remove from heat and whisk in vanilla.
  7. Slowly pour the cream mixture into the egg yolks while whisking constantly.
  8. Pour the custard through a fine mesh sieve into the ramekins.
  9. Pour hot water into the baking dish, filling it halfway up the sides of the ramekins.
  10. Bake for about 20-30 minutes, rotating halfway through, until the flan is almost set and jiggles slightly.
  11. Remove from the oven and let the ramekins cool in the water bath for 1 hour, then refrigerate overnight.
