Ingredients

The custard

  • 2 large Eggs
  • 2 cups Heavy cream
  • ½ cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ tsp Sea salt
  • 2 tsp Vanilla extract

Optional garnish

  • to taste Nutmeg

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Beat the eggs in a medium bowl until frothy.
  3. In a saucepan, heat the cream, powdered sweetener, and sea salt over medium-low heat until it reaches 180°F (82°C), stirring occasionally.
  4. Remove from heat and stir in the vanilla extract.
  5. While whisking the eggs, slowly pour the cream mixture into the eggs in a thin stream.
  6. Divide the custard mixture evenly among 6 ramekins and sprinkle with nutmeg if desired.
  7. Place the ramekins in a baking pan and fill the pan with water halfway up the sides of the ramekins.
  8. Bake for 30 to 40 minutes until the custard is barely set and jiggles slightly.
  9. Allow the custard to cool to room temperature before refrigerating if serving later.
