Instructions
- Preheat the oven to 350°F (177°C).
- Beat the eggs in a medium bowl until frothy.
- In a saucepan, heat the cream, powdered sweetener, and sea salt over medium-low heat until it reaches 180°F (82°C), stirring occasionally.
- Remove from heat and stir in the vanilla extract.
- While whisking the eggs, slowly pour the cream mixture into the eggs in a thin stream.
- Divide the custard mixture evenly among 6 ramekins and sprinkle with nutmeg if desired.
- Place the ramekins in a baking pan and fill the pan with water halfway up the sides of the ramekins.
- Bake for 30 to 40 minutes until the custard is barely set and jiggles slightly.
- Allow the custard to cool to room temperature before refrigerating if serving later.
