Ingredients

The custard

  • 2 large eggs
  • ¼ cup raw sugar
  • ¼ cup unbleached all-purpose flour
  • 1 pinch salt
  • ½ cup fat free milk
  • 1 tsp vanilla extract
  • powdered sugar for dusting
  • baking spray

The cherries

  • 1⅓ cups pitted cherries, sliced in half

Instructions

  1. Preheat the oven to 350°F.
  2. Lightly spray 4 ramekins with baking spray and dust with a little flour.
  3. Toss the cherries into the ramekins.
  4. Whisk together the eggs, sugar, salt, and flour until smooth.
  5. Add the milk and vanilla extract, whisking until smooth.
  6. Pour the mixture into the ramekins over the cherries.
  7. Bake for 25-28 minutes until lightly browned and a toothpick comes out clean.
  8. Allow to cool on a wire rack; it will deflate while cooling.
  9. Dust with powdered sugar before serving.
