Ingredients

The crust

  • 2 ½ cups crushed Ritz crackers
  • 8 tablespoons butter, melted
  • 2 tablespoons honey

The vanilla custard

  • 4 large egg yolks
  • ¼ cup cornstarch
  • cup honey, plus more for serving
  • 2 cups whole milk
  • 1 pinch sea salt
  • 1 tablespoon vanilla extract
  • 3 tablespoons butter, at room temperature

The toppings

  • 2 cups mixed berries
  • 1 medium peach, nectarine, or plum, sliced
  • to taste fresh thyme, for garnish

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix the crushed crackers, melted butter, and honey until combined, then press into a rough rectangle on the prepared pan and chill in the freezer.
  3. In a pot, whisk together egg yolks and cornstarch, then add honey, milk, and salt. Cook over medium-high heat until thickened, stirring continuously.
  4. Remove from heat, stir in vanilla and butter, and let cool for 10 minutes.
  5. Spread the custard over the chilled crust, cover, and refrigerate for 1-2 hours.
  6. Before serving, arrange the mixed berries and sliced fruit on top, drizzle with honey, and garnish with thyme.
