Instructions
- Line a baking sheet with parchment paper.
- In a bowl, mix the crushed crackers, melted butter, and honey until combined, then press into a rough rectangle on the prepared pan and chill in the freezer.
- In a pot, whisk together egg yolks and cornstarch, then add honey, milk, and salt. Cook over medium-high heat until thickened, stirring continuously.
- Remove from heat, stir in vanilla and butter, and let cool for 10 minutes.
- Spread the custard over the chilled crust, cover, and refrigerate for 1-2 hours.
- Before serving, arrange the mixed berries and sliced fruit on top, drizzle with honey, and garnish with thyme.
