Ingredients

Pie Crust

  • 1 ¼ cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • 4 ounces cold butter
  • 1 large egg

Pie Filling

  • 8 oz Mascarpone Cheese
  • 8 oz Cream Cheese
  • ¾ cup Confectioners Sugar
  • ½ cup Heavy Whipping Cream
  • 1 teaspoon Vanilla Extract
  • 1 unit Zest of one lemon
  • 6 units peaches
  • ¼ cup Peach Preserves

Instructions

  1. Prepare the pie crust by pulsing flour, sugar, and salt in a food processor.
  2. Add cold butter and pulse until crumbly, then add egg and pulse until dough clumps together.
  3. Form the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
  4. Roll out the dough into an 11-inch circle and place it in a 9-inch tart pan.
  5. Freeze the crust for 30 minutes, then preheat the oven to 375°F.
  6. Bake the crust for 25-30 minutes until set, then cool on a wire rack.
  7. For the filling, blend mascarpone, cream cheese, and confectioners' sugar until smooth.
  8. Add lemon zest and vanilla, then whip the heavy cream until soft peaks form and fold it into the mixture.
  9. Spread the filling into the cooled crust and top with peach slices.
  10. Heat the peach preserves and brush over the peaches for glaze.
  11. Refrigerate the tart for at least 1 hour before serving.
