Instructions
- Prepare the pie crust by pulsing flour, sugar, and salt in a food processor.
- Add cold butter and pulse until crumbly, then add egg and pulse until dough clumps together.
- Form the dough into a disc, wrap in plastic, and refrigerate for at least 1 hour.
- Roll out the dough into an 11-inch circle and place it in a 9-inch tart pan.
- Freeze the crust for 30 minutes, then preheat the oven to 375°F.
- Bake the crust for 25-30 minutes until set, then cool on a wire rack.
- For the filling, blend mascarpone, cream cheese, and confectioners' sugar until smooth.
- Add lemon zest and vanilla, then whip the heavy cream until soft peaks form and fold it into the mixture.
- Spread the filling into the cooled crust and top with peach slices.
- Heat the peach preserves and brush over the peaches for glaze.
- Refrigerate the tart for at least 1 hour before serving.
