Peach Frangipane Tart

Ingredients

  • 1 recipe tart dough
  • 1 recipe frangipane
  • 6 pieces peaches, halved and pitted
  • 4 tablespoons melted butter
  • 2 to 4 tablespoons sugar for sprinkling
  • to taste serving vanilla ice cream

Instructions

  1. Line a jelly roll pan with parchment paper and roll out the tart dough into a large rectangle.
  2. Trim the overhanging dough and chill the pan in the fridge for 10 minutes.
  3. Slice the fruit into ½-inch thick slices and set aside.
  4. Spread the frangipane evenly over the tart dough.
  5. Arrange the fruit slices over the frangipane in a single layer.
  6. Preheat the oven to 400ºF and chill the tart again for 10 minutes.
  7. Brush the fruit with melted butter and sprinkle sugar over the tart.
  8. Bake for 35-45 minutes until the crust is golden.
  9. Cool for 5 minutes, then transfer to a cooling rack and let cool for another 20 minutes before slicing.
