Instructions
- 1. Whisk together flour, sugar, and salt, then cut in butter until small pieces remain.
- 2. Add ice water gradually until the mixture forms a mass, then divide it into two balls and chill.
- 3. Toss peach slices with sugar and salt, and set aside.
- 4. Roll out one dough ball into a 9-inch circle and place it on parchment-lined baking sheet.
- 5. If using frangipane, spread it in the center of the tart, leaving a 2-inch border.
- 6. Arrange peach slices in concentric circles over the frangipane.
- 7. Preheat the oven to 400ºF and fold the dough border over the filling, crimping it.
- 8. Chill the tart for 10-15 minutes, then brush with melted butter and sprinkle with sugar.
- 9. Bake for 30-35 minutes until the crust is golden, then cool before serving with ice cream.
