Ingredients

The dough

  • cups all-purpose flour
  • 1 T. sugar
  • ¼ tsp. table salt
  • 8 T. unsalted butter
  • ¼ C. ice water
  • 1 T. ice water

The filling

  • 1 unit peach, sliced
  • pinch unit sugar
  • pinch unit salt
  • 1 T. butter, melted
  • 1 tsp. sugar
  • 1 unit parchment paper
  • unit unit vanilla ice cream

Instructions

  1. 1. Whisk together flour, sugar, and salt, then cut in butter until small pieces remain.
  2. 2. Add ice water gradually until the mixture forms a mass, then divide it into two balls and chill.
  3. 3. Toss peach slices with sugar and salt, and set aside.
  4. 4. Roll out one dough ball into a 9-inch circle and place it on parchment-lined baking sheet.
  5. 5. If using frangipane, spread it in the center of the tart, leaving a 2-inch border.
  6. 6. Arrange peach slices in concentric circles over the frangipane.
  7. 7. Preheat the oven to 400ºF and fold the dough border over the filling, crimping it.
  8. 8. Chill the tart for 10-15 minutes, then brush with melted butter and sprinkle with sugar.
  9. 9. Bake for 30-35 minutes until the crust is golden, then cool before serving with ice cream.
