Instructions
- Prepare the pastry cream by heating milk in a saucepan until bubbles form.
- Whisk together egg yolks and sugar, then add cornstarch and salt.
- Pour half of the hot milk into the egg mixture while whisking, then return to the saucepan with the rest of the milk.
- Cook over medium heat, whisking constantly, until thickened, then add vanilla and chill.
- For the tart dough, cream butter and powdered sugar, then add egg, vanilla, and salt.
- Mix in flour and baking powder until combined, wrap in plastic, and chill.
- Roll out the dough and fit it into a tart pan, then blind bake with weights.
- Once baked and cooled, fill the tart shell with pastry cream.
- Arrange the fresh fruit on top and brush with melted apricot glaze.
