Ingredients

Pastry Cream

  • 2 cups whole milk
  • 1 cup granulated sugar
  • 6 large egg yolks
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Tart Dough

  • 7 tablespoons butter, softened
  • ½ cup powdered sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • cups all-purpose flour, sifted
  • ¼ teaspoon baking powder

Fruit Topping

  • 1 pint fresh cut fruit (e.g., strawberries, blueberries, blackberries, raspberries, peaches, mango, kiwi)
  • as needed tablespoon apricot jam, melted

Instructions

  1. Prepare the pastry cream by heating milk in a saucepan until bubbles form.
  2. Whisk together egg yolks and sugar, then add cornstarch and salt.
  3. Pour half of the hot milk into the egg mixture while whisking, then return to the saucepan with the rest of the milk.
  4. Cook over medium heat, whisking constantly, until thickened, then add vanilla and chill.
  5. For the tart dough, cream butter and powdered sugar, then add egg, vanilla, and salt.
  6. Mix in flour and baking powder until combined, wrap in plastic, and chill.
  7. Roll out the dough and fit it into a tart pan, then blind bake with weights.
  8. Once baked and cooled, fill the tart shell with pastry cream.
  9. Arrange the fresh fruit on top and brush with melted apricot glaze.
