Ingredients

Crust

  • 2 Tbsp cold heavy cream
  • 1 large egg
  • ½ tsp pure vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup confectioners’ sugar
  • ¼ tsp salt
  • ½ cup unsalted butter

Vanilla Mascarpone Cream

  • ½ cup cold heavy cream
  • 8 oz mascarpone
  • ¼ cup confectioners’ sugar
  • ½ tsp pure vanilla extract
  • ½ bean vanilla bean

Fruit & Glaze

  • assorted fresh sliced fruit
  • 2 Tbsp orange or apricot preserves
  • 1 Tbsp water

Instructions

  1. Whisk together heavy cream, egg, and vanilla for the crust.
  2. Combine flour, confectioners’ sugar, and salt in a bowl, then cut in cold butter until crumbly.
  3. Mix in the heavy cream mixture until a dough forms, then chill for at least 1 hour.
  4. Roll out the dough and press it into a greased tart pan, then refrigerate while preheating the oven.
  5. Preheat oven to 400°F (204°C), blind bake the crust for 12 minutes, then reduce heat and bake for another 7-10 minutes until golden.
  6. Cool the crust completely before filling.
  7. Beat heavy cream until stiff peaks form, then mix mascarpone, sugar, and vanilla until combined.
  8. Fold in the whipped cream and spread into the cooled crust.
  9. Garnish with fresh fruit and brush with a glaze made from preserves and water if desired.
  10. Slice and enjoy!
