Instructions
- Whisk together heavy cream, egg, and vanilla for the crust.
- Combine flour, confectioners’ sugar, and salt in a bowl, then cut in cold butter until crumbly.
- Mix in the heavy cream mixture until a dough forms, then chill for at least 1 hour.
- Roll out the dough and press it into a greased tart pan, then refrigerate while preheating the oven.
- Preheat oven to 400°F (204°C), blind bake the crust for 12 minutes, then reduce heat and bake for another 7-10 minutes until golden.
- Cool the crust completely before filling.
- Beat heavy cream until stiff peaks form, then mix mascarpone, sugar, and vanilla until combined.
- Fold in the whipped cream and spread into the cooled crust.
- Garnish with fresh fruit and brush with a glaze made from preserves and water if desired.
- Slice and enjoy!
