Ingredients

Tart Shell

  • 6 tablespoons unsalted butter
  • 5 ounces flour
  • 1 tablespoon vegetable oil
  • 3 tablespoons water
  • 1 tablespoon sugar
  • a pinch salt

Filling

  • 1 pound mascarpone
  • ¼ cup confectioners sugar
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon grated lemon zest
  • ¾ teaspoon pure vanilla extract

Serving

  • as needed strawberries, stemmed and halved or quartered
  • as needed blueberries or raspberries

Instructions

  1. Preheat the oven to 410°F.
  2. In an oven-safe bowl, combine butter, oil, water, salt, and sugar, then place in the oven for about 15 minutes until boiling.
  3. Quickly mix in the flour until it forms a ball.
  4. Once cool enough to touch, press the dough into a tart mold and pierce the bottom with a fork.
  5. Bake for 15 minutes until light brown and cracked, then remove from the oven.
  6. In a bowl, whisk together mascarpone, confectioners sugar, lemon juice, zest, vanilla, and a pinch of salt until smooth.
  7. Spread the mascarpone filling over the cooled tart shell and top with fresh berries.
  8. Serve immediately or chill until ready to serve.
