Instructions
- 1. Preheat the oven to 350°F (177°C) and prepare a water bath.
- 2. In a bowl, combine egg yolks and 1 tablespoon of powdered Besti, and beat well.
- 3. Heat heavy cream with the remaining powdered Besti and vanilla bean powder in a pot until simmering.
- 4. Slowly pour the hot cream mixture into the egg yolks while whisking continuously.
- 5. Divide the mixture into ramekins and place them in the water bath.
- 6. Bake for 30 minutes until the center is barely jiggly.
- 7. Cool in the water bath for 1 hour, then refrigerate for at least 4 hours.
- 8. Before serving, sprinkle powdered Besti on top and caramelize with a torch.
