Ingredients

The custard

  • 2 cup Heavy cream
  • 6 large Egg yolks
  • ¼ cup Besti Powdered Monk Fruit Allulose Blend
  • ¼ tsp Vanilla bean powder
  • 1 tbsp Brandy

Optional toppings

  • to taste Sugar-free whipped cream
  • ½ tsp Powdered Besti (for topping)

Instructions

  1. 1. Preheat the oven to 350°F (177°C) and prepare a water bath.
  2. 2. In a bowl, combine egg yolks and 1 tablespoon of powdered Besti, and beat well.
  3. 3. Heat heavy cream with the remaining powdered Besti and vanilla bean powder in a pot until simmering.
  4. 4. Slowly pour the hot cream mixture into the egg yolks while whisking continuously.
  5. 5. Divide the mixture into ramekins and place them in the water bath.
  6. 6. Bake for 30 minutes until the center is barely jiggly.
  7. 7. Cool in the water bath for 1 hour, then refrigerate for at least 4 hours.
  8. 8. Before serving, sprinkle powdered Besti on top and caramelize with a torch.
