Ingredients

Custard

  • 3 large egg yolks
  • 1 ½ cups heavy whipping cream
  • 2 tablespoons sweetener
  • 2 teaspoons vanilla extract

Caramelized Topping

  • 2 tablespoons sweetener

Instructions

  1. Preheat the oven to 300°F.
  2. In a mixing bowl, combine egg yolks, sweetener, and vanilla.
  3. Heat heavy cream in a saucepan until it bubbles at the edges, but do not boil.
  4. Gradually pour the heated cream into the egg mixture while stirring continuously.
  5. Place two 4oz ramekins in a baking dish and pour the mixture into them.
  6. Add hot water to the baking dish until it reaches halfway up the sides of the ramekins.
  7. Bake for 30-40 minutes until the edges are set and the center is jiggly.
  8. Remove ramekins from the water bath and let them cool for about 30 minutes.
  9. Chill the ramekins in the refrigerator for at least 2 hours, preferably overnight.
  10. Sprinkle sweetener evenly over the chilled custard.
  11. Using a kitchen torch, caramelize the sweetener until it forms a crust.
  12. Let it cool for 10-15 minutes before serving.
