Ingredients

  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 5 large egg yolks
  • ½ cup allulose

Instructions

  1. Preheat the oven to 150C/300F.
  2. Grease six 6-ounce ramekins and place them in a deep baking dish.
  3. In a saucepan, heat the heavy cream until warm, stirring regularly, then whisk in the vanilla extract and remove from heat.
  4. In a mixing bowl, whisk together the egg yolks and allulose until combined.
  5. Slowly add the warm cream to the egg yolk mixture while whisking until smooth.
  6. Distribute the mixture evenly among the ramekins.
  7. Pour boiling water into the baking dish until it reaches halfway up the sides of the ramekins.
  8. Bake for 30-35 minutes, then cool completely on a wire rack.
  9. Refrigerate for at least 2 hours or overnight.
  10. Before serving, let sit at room temperature for 20 minutes, then sprinkle sweetener on top and caramelize with a blowtorch.
