Keto Creme Brulee

Instructions
- Preheat the oven to 150C/300F.
- Grease six 6-ounce ramekins and place them in a deep baking dish.
- In a saucepan, heat the heavy cream until warm, stirring regularly, then whisk in the vanilla extract and remove from heat.
- In a mixing bowl, whisk together the egg yolks and allulose until combined.
- Slowly add the warm cream to the egg yolk mixture while whisking until smooth.
- Distribute the mixture evenly among the ramekins.
- Pour boiling water into the baking dish until it reaches halfway up the sides of the ramekins.
- Bake for 30-35 minutes, then cool completely on a wire rack.
- Refrigerate for at least 2 hours or overnight.
- Before serving, let sit at room temperature for 20 minutes, then sprinkle sweetener on top and caramelize with a blowtorch.
