Instructions
- Preheat the oven to 350°F and line a 9-inch springform pan with parchment paper.
- In a bowl, mix almond flour, melted butter, Besti, and vanilla until combined and slightly crumbly.
- Press the mixture into the bottom of the pan and bake for about 10-12 minutes until barely golden. Let cool.
- In another bowl, beat the cream cheese and powdered sweetener until fluffy.
- Add eggs one at a time, then mix in lemon juice and vanilla extract.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 40-55 minutes until the center is almost set but still jiggly.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight until set.
