Instructions
- Preheat the oven to 350°F (177°C) and line the bottom of a springform pan with parchment paper.
- Make the crust by mixing almond flour, melted butter, Besti, and vanilla extract until combined. Press into the bottom of the pan and bake for about 10 minutes until barely golden. Let cool.
- In a large bowl, beat the cream cheese and Besti Powdered until fluffy. Add eggs one at a time, then mix in lemon juice and vanilla extract.
- Pour the filling over the cooled crust and smooth the top. Bake for 45-55 minutes until the center is nearly set but still jiggly.
- Cool the cheesecake to room temperature, then refrigerate for at least 4 hours until fully set.
- For the strawberry sauce, combine chopped strawberries, lemon juice, and jam in a saucepan over medium heat. Simmer until the sauce thickens.
- Add halved strawberries to the sauce and heat briefly until softened. Cool the sauce.
- Once the cheesecake is set, remove from the pan, top with strawberry sauce and halved strawberries, and serve.
