Ingredients

The crust

  • 2 cups Wholesome Yum Blanched Almond Flour
  • cup Unsalted butter
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 1 tsp Vanilla extract

The filling

  • 32 oz Cream cheese
  • 1⅓ cup Besti Powdered Monk Fruit Allulose Blend
  • 3 large Eggs
  • 1 tbsp Lemon juice
  • 1 tsp Vanilla extract
  • 1 cup Blueberries

The topping

  • 2 cups Blueberries
  • ¼ cup Besti Powdered Monk Fruit Allulose Blend
  • 1 tbsp Lemon juice
  • 2 tsp Lemon zest

Instructions

  1. Preheat the oven and prepare the springform pan.
  2. Mix almond flour and sweetener in a bowl.
  3. Melt the butter and stir in vanilla, then combine with the almond flour mixture.
  4. Press the mixture into the pan and bake until golden.
  5. Beat cream cheese and powdered sweetener until fluffy.
  6. Add eggs one at a time, then mix in lemon juice and vanilla.
  7. Fold in blueberries and pour the filling over the crust.
  8. Bake until the center is almost set.
  9. Cool on the counter, then refrigerate for at least 4 hours.
  10. Prepare the blueberry topping by cooking blueberries with lemon juice and sweetener.
  11. Assemble by pouring the sauce over the cheesecake and adding whole blueberries.
