Instructions
- Preheat the oven and prepare the springform pan.
- Mix almond flour and sweetener in a bowl.
- Melt the butter and stir in vanilla, then combine with the almond flour mixture.
- Press the mixture into the pan and bake until golden.
- Beat cream cheese and powdered sweetener until fluffy.
- Add eggs one at a time, then mix in lemon juice and vanilla.
- Fold in blueberries and pour the filling over the crust.
- Bake until the center is almost set.
- Cool on the counter, then refrigerate for at least 4 hours.
- Prepare the blueberry topping by cooking blueberries with lemon juice and sweetener.
- Assemble by pouring the sauce over the cheesecake and adding whole blueberries.
