Ingredients

The bread

  • 2 ½ cups Wholesome Yum Blanched Almond Flour
  • ½ cup Besti Monk Fruit Allulose Blend
  • ½ tbsp Baking powder
  • ½ tsp Xanthan gum
  • ¼ tsp Sea salt
  • cup Unsweetened almond milk
  • cup Unsalted butter
  • 3 large Eggs
  • ½ tsp Vanilla extract
  • 1 medium Lemon
  • ¾ cup Blueberries

The glaze

  • cup Besti Powdered Monk Fruit Allulose Blend

Instructions

  1. Preheat the oven to 350°F (176°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mix the dry ingredients: almond flour, sweetener, baking powder, xanthan gum, and sea salt.
  3. Add the wet ingredients: almond milk, melted butter, eggs, and vanilla, and mix until smooth. Stir in lemon zest and fold in blueberries.
  4. Transfer the batter to the lined loaf pan and smooth the top.
  5. Bake for 40 minutes, then tent with foil and bake for an additional 10-15 minutes until a toothpick comes out clean.
  6. Let the bread cool completely before removing it from the pan.
  7. For the glaze, whisk together lemon juice and powdered sweetener, adjusting for consistency as needed. Drizzle over the cooled bread.
