Instructions
- Preheat the oven to 350°F (176°C) and line a loaf pan with parchment paper.
- In a large bowl, mix the dry ingredients: almond flour, sweetener, baking powder, xanthan gum, and sea salt.
- Add the wet ingredients: almond milk, melted butter, eggs, and vanilla, and mix until smooth. Stir in lemon zest and fold in blueberries.
- Transfer the batter to the lined loaf pan and smooth the top.
- Bake for 40 minutes, then tent with foil and bake for an additional 10-15 minutes until a toothpick comes out clean.
- Let the bread cool completely before removing it from the pan.
- For the glaze, whisk together lemon juice and powdered sweetener, adjusting for consistency as needed. Drizzle over the cooled bread.
