Ingredients

The bread

  • 1 cup Wholesome Yum Blanched Almond Flour
  • ¼ cup Wholesome Yum Coconut Flour
  • 2 tsp Baking powder
  • ¼ tsp Sea salt
  • cup Unsalted butter
  • 12 large Egg whites

Optional ingredients

  • 1 tbsp Besti Monk Fruit Allulose Blend
  • ¼ tsp Xanthan gum
  • ¼ tsp Cream of tartar

Instructions

  1. Preheat the oven to 325°F (163°C) and line a loaf pan with parchment paper.
  2. Combine almond flour, coconut flour, baking powder, sweetener, xanthan gum, and sea salt in a food processor and pulse until combined.
  3. Add melted butter to the mixture and pulse until crumbly.
  4. In a large bowl, beat the egg whites and cream of tartar until stiff peaks form.
  5. Add half of the beaten egg whites to the food processor and pulse briefly until just combined.
  6. Gently fold the mixture from the food processor into the remaining egg whites until no streaks remain.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for about 40 minutes until golden brown, then tent with foil and bake for another 30-45 minutes until firm.
  9. Let the bread cool completely before slicing.
