Ingredients

  • 2 cups Wholesome Yum Blanched Almond Flour
  • ¼ cup Psyllium husk powder
  • 1 tbsp Baking powder
  • ½ tsp Sea salt
  • 4 large Eggs (at room temperature)
  • ¼ cup Coconut oil (measured solid, then melted)
  • ½ cup Warm water

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8x4 inch loaf pan with parchment paper.
  2. In a large bowl, beat the eggs with a hand mixer until they double in volume.
  3. In another bowl, mix the almond flour, psyllium husk powder, baking powder, and sea salt.
  4. Combine the dry ingredients with the beaten eggs.
  5. Add the melted coconut oil and warm water to the mixture and mix well.
  6. Transfer the dough to the prepared loaf pan, smoothing the top.
  7. Bake for 55-70 minutes until a toothpick comes out clean and the top is hard.
  8. Cool completely before removing from the pan.
