Ingredients

The dry ingredients

  • 10 ounces almond flour
  • 3 ounces Bob's Red Mill Golden Flax Meal
  • 100 grams NOW Psyllium Husk Powder
  • 1 ½ tablespoons baking powder
  • 1 teaspoon salt

The wet ingredients

  • 8 ounces egg whites
  • 3 ounces vinegar
  • 14 ounces boiling water

Instructions

  1. Preheat the oven to 350°F and prepare an 8x4 inch metal loaf pan with baking spray.
  2. Grind the golden flax meal to ensure it is very fine.
  3. In a large bowl, combine the almond flour, golden flax meal, psyllium powder, salt, and baking powder, mixing well.
  4. In a separate bowl, combine the egg whites and vinegar, then add to the dry ingredients and mix until just combined.
  5. Quickly add the boiling water to the mixture and mix again until incorporated.
  6. Shape the dough gently into a loaf and place it in the prepared pan.
  7. Bake for 80-90 minutes, checking the internal temperature to ensure it reaches 205-210°F.
  8. Let the loaf cool in the pan for 5 minutes before transferring it to a cooling rack.
