Ingredients

  • 2 ½ cups blanched almond flour
  • ¼ cup ground flaxseed meal
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon (optional)
  • 4 large eggs
  • 1 large egg white
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons coconut oil, unsalted butter, or ghee

Instructions

  1. Melt the coconut oil in a microwave-safe bowl and let it cool.
  2. Preheat the oven to 350°F and prepare a 9x5-inch baking pan with nonstick spray and parchment paper.
  3. In a large bowl, whisk together the almond flour, flaxseed meal, baking soda, cinnamon (if using), and salt.
  4. In another bowl, whisk the eggs, egg white, honey, apple cider vinegar, and cooled coconut oil until smooth.
  5. Combine the wet and dry ingredients, stirring until well mixed.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 35 to 40 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
