Instructions
- Melt the coconut oil in a microwave-safe bowl and let it cool.
- Preheat the oven to 350°F and prepare a 9x5-inch baking pan with nonstick spray and parchment paper.
- In a large bowl, whisk together the almond flour, flaxseed meal, baking soda, cinnamon (if using), and salt.
- In another bowl, whisk the eggs, egg white, honey, apple cider vinegar, and cooled coconut oil until smooth.
- Combine the wet and dry ingredients, stirring until well mixed.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 35 to 40 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.
