Ingredients

  • 2 cups almond flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 large bananas
  • 2 large eggs or flax eggs
  • ½ cup coconut oil or butter
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and prepare a loaf pan.
  2. Mix the dry ingredients in a large bowl.
  3. In a separate bowl, whisk together the mashed bananas, eggs, coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed, and fold in chocolate chips if using.
  5. Transfer the batter into the prepared loaf pan.
  6. Bake for 45-50 minutes until a skewer comes out mostly clean.
  7. Let the bread cool completely in the pan before slicing.
