Ingredients

The banana bread

  • 1 ½ cups mashed ripe banana
  • 3 large eggs
  • ¼ cup pure maple syrup or honey
  • 3 tablespoons canola oil or melted coconut oil or melted unsalted butter
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • pinch ground nutmeg (optional)
  • ½ teaspoon kosher salt
  • 2 ½ cups blanched almond flour
  • cup ground flaxseed meal or additional almond flour

The chocolate drizzle (optional)

  • ¼ cup semi-sweet chocolate chips or chopped chocolate
  • ½ teaspoon coconut oil

Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
  2. Mash the bananas in a mixing bowl and ensure you have 1 ½ cups.
  3. Whisk in the eggs, maple syrup, oil, and vanilla until combined.
  4. Add baking powder, baking soda, cinnamon, nutmeg, and salt, and whisk to combine.
  5. Fold in the almond flour and flaxseed until just incorporated.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 20 minutes, then cover loosely with foil and bake for an additional 20-25 minutes until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the chocolate drizzle, melt chocolate chips with coconut oil and drizzle over the cooled loaf.
