Almond Flour Banana Bread

Ingredients

  • 2 ½ cups Wholesome Yum Blanched Almond Flour
  • 1 tbsp Baking powder
  • 2 tsp Cinnamon
  • ½ tsp Sea salt
  • cup Wholesome Yum Zero Sugar Honey Substitute
  • ¼ cup Unsalted butter (melted)
  • 3 large Bananas (ripe; 1 ½ cups mashed)
  • 3 large Eggs
  • 1 tsp Vanilla extract
  • 1 cup Walnuts (chopped; divided into ¾ cup and ¼ cup)

Instructions

  1. Preheat the oven to 350°F (176°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a medium bowl, mix almond flour, cinnamon, baking powder, and sea salt.
  3. In a small bowl, mash the bananas.
  4. In a large bowl, whisk the eggs until frothy, then add honey, melted butter, mashed bananas, and vanilla. Whisk until combined.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Fold in ¾ cup of the chopped walnuts.
  7. Transfer the batter to the lined loaf pan and sprinkle the top with the remaining ¼ cup walnuts.
  8. Bake for 40-45 minutes until the top is golden brown, then cover with foil and bake for an additional 20-30 minutes until a toothpick comes out clean.
  9. Cool completely before removing from the pan and slicing.
