Ingredients

The bread

  • 3 large ripe bananas
  • 2 cups blanched almond flour
  • 3 large eggs
  • cup maple syrup
  • ½ teaspoon fine sea salt
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 tablespoon extra-virgin olive oil

Optional toppings

  • handful chocolate chips or walnuts

Instructions

  1. Preheat the oven to 350ºF and prepare a loaf pan with cooking spray and parchment paper.
  2. Mash the ripe bananas in a bowl until smooth.
  3. In a large mixing bowl, combine the mashed bananas with almond flour, eggs, maple syrup, salt, baking powder, cinnamon, and olive oil, stirring until smooth.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Sprinkle any optional toppings over the batter.
  6. Bake for about 55 to 60 minutes until the top is golden and firm.
  7. Let the bread cool completely in the pan before slicing.
