Ingredients

The bread

  • 3 medium over-ripe bananas
  • 3 large eggs
  • ¼ cup refined coconut oil
  • 1 cup coconut sugar
  • 1 cup superfine blanched almond flour
  • ¾ cup coconut flour
  • 1 teaspoon fresh baking soda
  • ½ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup finely chopped walnuts

The topping

  • 1 medium banana
  • to taste coconut sugar

Instructions

  1. Preheat the oven to 350°F and prepare the loaf pan with parchment paper.
  2. Mash the over-ripe bananas in a large bowl until very fine.
  3. In a separate bowl, whisk the eggs and then add them to the mashed bananas.
  4. Mix in the melted coconut oil, coconut sugar, almond flour, coconut flour, baking soda, salt, and vanilla extract, stirring gently.
  5. Transfer the batter to the prepared loaf pan and spread it evenly.
  6. Optionally, prepare the banana topping by coating the halved banana in coconut sugar and placing it on top of the batter.
  7. Bake for 45 minutes, checking for doneness with a toothpick every 5 minutes until it comes out mostly clean.
  8. Allow the bread to cool for 5 minutes before removing it from the pan and slicing.
