Almond Flour Banana Bread

Instructions
- Preheat the oven to 350°F and prepare the loaf pan with parchment paper.
- Mash the over-ripe bananas in a large bowl until very fine.
- In a separate bowl, whisk the eggs and then add them to the mashed bananas.
- Mix in the melted coconut oil, coconut sugar, almond flour, coconut flour, baking soda, salt, and vanilla extract, stirring gently.
- Transfer the batter to the prepared loaf pan and spread it evenly.
- Optionally, prepare the banana topping by coating the halved banana in coconut sugar and placing it on top of the batter.
- Bake for 45 minutes, checking for doneness with a toothpick every 5 minutes until it comes out mostly clean.
- Allow the bread to cool for 5 minutes before removing it from the pan and slicing.
