Ingredients

The bread

  • 1¾ – 2 cups fine blanched almond flour
  • 2 Tablespoons coconut flour
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • ¼ cup ground flaxseed
  • 1 Tablespoon cinnamon
  • 5 large eggs
  • 1 large egg white
  • teaspoons apple cider vinegar
  • 2 Tablespoons maple syrup or honey
  • 3 Tablespoons melted coconut oil or clarified butter

Optional topping

  • to taste chia seeds

Instructions

  1. Preheat the oven to 350°F and prepare a bread pan with parchment paper.
  2. In a large bowl, mix together the almond flour, coconut flour, salt, baking soda, ground flaxseed, and ½ Tablespoon of cinnamon.
  3. In another bowl, whisk the eggs and egg white, then add the apple cider vinegar, maple syrup, and 2 Tablespoons of coconut oil.
  4. Gradually combine the wet and dry ingredients, ensuring no clumps remain.
  5. Pour the batter into the prepared loaf pan and bake for 30-35 minutes until a toothpick comes out clean.
  6. Prepare the glaze by mixing the remaining melted butter with ½ Tablespoon of cinnamon and brush it on the warm bread.
  7. Allow the bread to cool before slicing and serving.
