Ingredients

The dry ingredients

  • 1 ½ Cup Almond Flour
  • ¼ Cup Tapioca Flour
  • 3 Tablespoons Coconut Flour
  • 1 Tablespoon Cinnamon
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Sea Salt

The wet ingredients

  • 4 Bananas super ripe
  • 3 Eggs large
  • 1 Teaspoon Vanilla Extract

Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: almond flour, tapioca flour, coconut flour, cinnamon, baking soda, baking powder, and sea salt.
  3. In a blender, combine the wet ingredients: bananas, eggs, and vanilla extract, and pulse until smooth.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix lightly until combined.
  5. Transfer the batter to the loaf pan and smooth it out evenly with a rubber spatula.
  6. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. Allow the banana bread to cool fully before slicing, and top with extra cinnamon if desired.
