Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- In a bowl, whisk together the flour, almond flour, flax seed, cinnamon, baking powder, baking soda, and salt.
- In another bowl, mix the bananas, brown sugar, and oil until fluffy, then add eggs and vanilla until combined.
- Gradually mix the dry ingredients into the banana mixture until just combined, then fold in the shredded zucchini.
- Pour the mixture into the loaf pan.
- In a small bowl, mix cinnamon and sugar, then sprinkle it over the batter.
- Bake for 50-55 minutes, or until a toothpick comes out clean. Allow to cool before slicing.
