Ingredients

The banana bread

  • 1 ¼ cups flour
  • ¼ cup almond flour
  • 2 tablespoons ground flax seed
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon coarse salt
  • 2 medium ripe bananas
  • ½ cup brown sugar
  • ¼ cup oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 medium zucchini, shredded

The cinnamon crunch topping

  • 1 tablespoon ground cinnamon
  • 1 tablespoon granulated sugar

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a bowl, whisk together the flour, almond flour, flax seed, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, mix the bananas, brown sugar, and oil until fluffy, then add eggs and vanilla until combined.
  4. Gradually mix the dry ingredients into the banana mixture until just combined, then fold in the shredded zucchini.
  5. Pour the mixture into the loaf pan.
  6. In a small bowl, mix cinnamon and sugar, then sprinkle it over the batter.
  7. Bake for 50-55 minutes, or until a toothpick comes out clean. Allow to cool before slicing.
