Cinnamon Swirl Banana Bread

Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ¼ cup brown sugar
  • 1 teaspoon baking soda
  • teaspoon salt

Wet Ingredients

  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • ½ cup maple syrup
  • ¼ cup Greek yogurt
  • 2 teaspoons vanilla extract
  • ¼ cup unsweetened almond milk
  • 3 tablespoons melted butter

Cinnamon Swirl

  • 2 tablespoons melted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350ºF and prepare a bread pan with nonstick spray.
  2. In a medium bowl, whisk together the dry ingredients.
  3. In a large bowl, mash the ripe bananas and then mix in the eggs, maple syrup, Greek yogurt, vanilla, melted butter, and almond milk.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Pour half of the batter into the prepared pan and drizzle half of the cinnamon swirl mixture on top, swirling it in gently.
  6. Add the remaining batter to the pan and top with the rest of the cinnamon swirl mixture, swirling again.
  7. Bake for 25 minutes, then cover with foil and bake for an additional 20-25 minutes until a toothpick comes out clean.
  8. Let cool for 10-15 minutes before removing from the pan to cool completely on a rack.
