Cinnamon Crumble Banana Bread

Ingredients

The bread

  • 3 medium bananas, mashed
  • 2 large eggs
  • ¾ cup maple syrup
  • ¾ cup coconut oil, melted
  • 1 tsp vanilla
  • 2 cups white flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ¼ tsp salt

The crumble

  • ¼ cup white flour
  • ¼ cup coconut sugar (or brown sugar)
  • 1 tsp cinnamon
  • 3 tbsp coconut oil

The glaze

  • cups powdered sugar
  • ¼ tsp cinnamon
  • 1–2 tbsp milk of choice

Instructions

  1. Preheat the oven to 350°F and grease a bread loaf pan.
  2. In a large bowl, whisk together the mashed bananas and eggs, then add the maple syrup, coconut oil, and vanilla.
  3. In a medium bowl, mix the flour, cinnamon, baking soda, and salt.
  4. Slowly whisk the dry ingredients into the wet ingredients until combined, being careful not to over mix.
  5. Pour the batter into the greased loaf pan.
  6. In the bowl used for the flour, mix the crumble ingredients until crumbly.
  7. Sprinkle the crumble evenly over the top of the banana bread batter.
  8. Bake for 50-55 minutes or until a toothpick inserted comes out clean. Let it cool.
  9. Once cool, mix the glaze ingredients and pour over the top of the bread.
