Ingredients

The bread

  • 2 cups fine blanched almond flour
  • 2 Tablespoons sifted coconut flour
  • ¼ teaspoon Kosher salt
  • 1 teaspoon baking soda
  • ¼ cup ground flaxseed
  • ¼ cup monk fruit sweetener (optional)
  • ½ Tablespoon cinnamon (plus extra for topping)
  • 1 teaspoon ground turmeric
  • 5 large eggs (room temp and whisked)
  • 1 small frozen banana (thawed and mashed)
  • 1 ½ teaspoons apple cider vinegar or lemon juice
  • 1 teaspoon pure vanilla extract
  • 2 Tablespoons melted clarified butter or refined coconut oil (plus extra for brushing)

Optional toppings

  • to taste toasted chopped nuts
  • to taste thin banana slices

Instructions

  1. Preheat the oven to 350°F and grease an 8x4-inch bread pan, lining the bottom with parchment paper.
  2. In a large bowl, mix the almond flour, coconut flour, salt, baking soda, and ground flaxseed, ensuring there are no clumps.
  3. In a small bowl, whisk the eggs and then combine them with the flour mixture.
  4. Add the mashed banana and its juice to the mixture, and gently combine.
  5. Pour in the apple cider vinegar, vanilla, and melted butter (or oil) and fold until smooth.
  6. Pour the batter into the prepared loaf pan. Optionally, add sliced banana on top and brush with melted butter, turmeric, and cinnamon.
  7. Bake for 35-45 minutes, covering with foil if the center is not set, and bake for an additional 5-10 minutes if needed.
