Ingredients

Dry Ingredients

  • 1 ¼ cup almond flour
  • ¼ cup flaxseed meal
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon xanthan gum
  • ½ teaspoon cinnamon

Wet Ingredients

  • ½ – ¾ cup Brown Swerve
  • 2 sticks butter (1 cup, softened)
  • 4 pieces eggs
  • cup sour cream or Greek yogurt
  • 1 tablespoon banana extract
  • 2 teaspoons vanilla extract

Optional Add-Ins

  • ½ cup chopped walnuts or pecans
  • ½ cup Lily's sugar free dark chocolate chips

Instructions

  1. Preheat the oven to 325°F.
  2. Grease a muffin tin or loaf pan with non-stick spray, or line the loaf pan with parchment paper.
  3. In a large bowl, whisk together the dry ingredients and set aside.
  4. In another bowl, beat the butter and Brown Swerve until smooth and creamy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in the sour cream, banana extract, and vanilla extract until combined.
  7. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  8. Fold in nuts or chocolate chips if using.
  9. Spread the batter into the prepared pan and top with additional nuts if desired.
  10. Bake for 25 to 30 minutes for muffins or 55 to 60 minutes for a loaf.
  11. Check for doneness with a toothpick; it should come out clean or with few crumbs.
  12. Let the bread cool in the pan before slicing.
