Instructions
- Preheat the oven to 325°F.
- Grease a muffin tin or loaf pan with non-stick spray, or line the loaf pan with parchment paper.
- In a large bowl, whisk together the dry ingredients and set aside.
- In another bowl, beat the butter and Brown Swerve until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Mix in the sour cream, banana extract, and vanilla extract until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in nuts or chocolate chips if using.
- Spread the batter into the prepared pan and top with additional nuts if desired.
- Bake for 25 to 30 minutes for muffins or 55 to 60 minutes for a loaf.
- Check for doneness with a toothpick; it should come out clean or with few crumbs.
- Let the bread cool in the pan before slicing.
