Ingredients

The batter

  • 2 ½ cups almond flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup sugar free brown sugar
  • cup butter, melted
  • 3 large eggs
  • 1 tablespoon banana extract
  • cup milk of choice

Optional mix-ins

  • 1 cup chocolate chips
  • ¼ cup walnuts

Instructions

  1. Preheat the oven to 180C/350F and prepare a 12-count muffin tin.
  2. In a bowl, whisk together the almond flour, baking powder, and salt.
  3. In another bowl, mix the melted butter, eggs, brown sugar, banana extract, and milk until smooth.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. If using, fold in the chocolate chips.
  6. Distribute the batter evenly into the muffin liners.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Let the muffins cool in the tin for 10 minutes before transferring to a wire rack.
