Ingredients

Custard Base

  • 4 large eggs
  • 2 large egg yolks
  • ½ teaspoon kosher salt
  • 1 14-ounce can sweetened condensed milk
  • 1 12-ounce can evaporated milk
  • 1 teaspoon vanilla paste or extract

Caramel Topping

  • 1 cup granulated sugar
  • ¼ cup water
  • a pinch kosher salt

Instructions

  1. Preheat the oven to 350°F and prepare a water bath.
  2. In a blender, combine the eggs, egg yolks, salt, sweetened condensed milk, evaporated milk, and vanilla. Blend until smooth.
  3. In a saucepan, combine sugar and water over medium-low heat until dissolved, then increase heat until it turns golden brown.
  4. Quickly pour the caramel into the baking pan, swirling to coat the bottom evenly before it hardens.
  5. Pour the custard mixture over the hardened caramel in the baking pan.
  6. Cover the pan with foil and place it in the water bath.
  7. Bake for 40 to 45 minutes until slightly jiggly but firm.
  8. Cool on the counter for 30 minutes, then refrigerate for at least 4 hours or overnight.
  9. To serve, run a knife around the edge, invert onto a plate, and slice.
