Instructions
- Preheat the oven to 350°F and prepare a water bath.
- In a blender, combine the eggs, egg yolks, salt, sweetened condensed milk, evaporated milk, and vanilla. Blend until smooth.
- In a saucepan, combine sugar and water over medium-low heat until dissolved, then increase heat until it turns golden brown.
- Quickly pour the caramel into the baking pan, swirling to coat the bottom evenly before it hardens.
- Pour the custard mixture over the hardened caramel in the baking pan.
- Cover the pan with foil and place it in the water bath.
- Bake for 40 to 45 minutes until slightly jiggly but firm.
- Cool on the counter for 30 minutes, then refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edge, invert onto a plate, and slice.
