Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, celery, and minced garlic, and cook until tender, about 5 minutes.
- Stir in salt, pepper, chicken broth, and bay leaves; bring to a boil.
- Reduce to a simmer and add chicken and cauliflower rice; cook for 30-35 minutes until chicken is tender.
- Remove from heat and serve with parsley and lemon juice.
