Ingredients

The soup base

  • 16 oz cooked chicken, diced
  • 6 cups bone broth or unsalted chicken broth

The vegetables

  • 4 tablespoons butter, avocado oil, or olive oil
  • 8 oz celery root, cubed
  • 1 cup celery, sliced
  • ½ cup onion, diced
  • cup carrot, roll cut
  • 1 large clove garlic, sliced
  • 1 teaspoon lemon zest
  • 1 whole bay leaf

Seasonings

  • 1 tablespoon garlic herb seasoning blend
  • 2 teaspoons chicken base
  • ¼ cup dry white wine
  • to taste salt and pepper

Instructions

  1. Dice the chicken and prepare the vegetables.
  2. Heat a 4-quart pot over medium-high heat and add the butter or oil along with the vegetables, lemon zest, and bay leaf.
  3. Stir to coat the ingredients and reduce the heat to medium.
  4. Add the garlic herb seasoning, chicken base, and wine (or lemon-water mixture). Stir and cover to sweat the vegetables for about 3-4 minutes.
  5. Add the chicken broth and bring to just under a boil, then reduce to a simmer until the vegetables are tender.
  6. Add the chicken and season with salt and pepper to taste.
