Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic
  • 2 cups shredded chicken
  • 4 ounces cream cheese
  • 2 cups chicken broth
  • ¼ cup heavy cream
  • ¾ teaspoon dried parsley flakes
  • ½ teaspoon onion powder
  • cups cauliflower rice
  • to taste salt

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Add garlic and cook until lightly golden.
  3. Stir in shredded chicken until coated in butter.
  4. Add cream cheese and stir until melted and combined.
  5. Pour in chicken broth, heavy cream, parsley, and onion powder, then bring to a boil.
  6. Reduce heat to a simmer and cook for 3 to 4 minutes until slightly reduced.
  7. Stir in cooked cauliflower rice and salt to taste, heating through if necessary.
  8. Serve and enjoy!
