Ingredients

The zoodles and chicken

  • 10 oz zucchini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 12 oz boneless, skinless chicken breast, cut into cubes
  • 1 tablespoon chopped scallion
  • to taste white sesame, for garnishing

The sauce

  • 2 tablespoons honey
  • 1 tablespoon sriracha
  • 1 ½ tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ½ tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Spiralize the zucchini to make zoodles and transfer them to serving bowls.
  2. In a separate bowl, whisk together all the sauce ingredients until well mixed.
  3. Heat olive oil in a skillet over medium heat and sauté the garlic until aromatic.
  4. Add the chicken to the skillet and stir-fry until it turns white.
  5. Pour in the sauce and stir continuously until the chicken is fully cooked and the sauce thickens.
  6. Add the scallions to the skillet and stir to combine.
  7. Top the zoodles with the chicken mixture, toss gently, and garnish with sesame seeds before serving.
