Instructions
- Make the dressing by combining sunflower seed butter, sriracha, lime juice, and salt in a large bowl.
- Whisk the dressing until well blended and thick.
- Spiralize the zucchini to create zoodles.
- Dice and chop the carrot and other veggies.
- Add the zoodles, carrots, and shredded chicken to the bowl with the dressing.
- Toss everything well to combine.
- Transfer to a clean bowl and top with avocado, cherry tomatoes, scallions, cilantro, and sesame seeds if desired.
- Serve immediately.
