Spicy Thai Chicken Zoodles

Ingredients

Dressing

  • 1 tablespoon sunflower seed butter or your favorite nut butter
  • 1 teaspoon sriracha
  • ½ lime juice
  • a pinch of salt

Zoodle Salad

  • 1 medium zucchini
  • 1 small carrot
  • 1 cup leftover cooked chicken, shredded
  • ¼ avocado peeled and thinly sliced
  • ½ cup cherry tomatoes, halved
  • 1 small scallion, thinly sliced
  • 1 tablespoon fresh cilantro leaves
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Make the dressing by combining sunflower seed butter, sriracha, lime juice, and salt in a large bowl.
  2. Whisk the dressing until well blended and thick.
  3. Spiralize the zucchini to create zoodles.
  4. Dice and chop the carrot and other veggies.
  5. Add the zoodles, carrots, and shredded chicken to the bowl with the dressing.
  6. Toss everything well to combine.
  7. Transfer to a clean bowl and top with avocado, cherry tomatoes, scallions, cilantro, and sesame seeds if desired.
  8. Serve immediately.
