Lemon Chicken Zoodles with Spicy Sesame Oil

Ingredients

  • 1 lb chicken breasts
  • 6 cups zucchini spirals
  • 1 Tbsp avocado oil
  • 1 tsp fresh minced garlic
  • ½ tsp black pepper
  • 1 pint cherry tomatoes
  • cup chopped walnuts
  • 4 leaves fresh sage
  • 1 whole lemon
  • 3 Tbsp Chosen Foods Spicy Sesame Oil

Instructions

  1. Cook the chicken breasts using your preferred method.
  2. While the chicken is cooking, chop the tomatoes and walnuts.
  3. In a medium skillet, heat the avocado oil and add the zoodles, garlic, and pepper. Sauté for 3-4 minutes.
  4. Squeeze lemon juice over the zoodles and stir.
  5. Add the cherry tomatoes and cook for an additional 2 minutes until softened.
  6. Slice the cooked chicken and place it on top of the zoodles and tomatoes.
  7. Top with walnuts and torn sage leaves.
  8. Drizzle with Spicy Sesame Oil and enjoy.
